Brief:
Oversee culinary operations to ensure quality, creativity, and profitability. Collaborate with F&B management to achieve business goals and develop the culinary team.
Responsibilities:
- Lead and manage all culinary operations to ensure creativity, quality, safety, and sustainable profitability.
- Collaborate with ExCom and F&B Manager to achieve business goals and meet or exceed financial targets.
- Develop and execute F&B strategies to drive growth across Restaurant & Bar, Banquet, Catering, and Delivery services.
- Oversee budgeting, cost control, and procurement in line with financial objectives.
- Direct daily kitchen operations, ensuring consistent food quality and guest satisfaction.
- Train, mentor, and motivate culinary staff to maintain high culinary standards and professional growth.
- Recruit, develop, and retain culinary talent to support sustainable expansion.
- Foster a positive, professional work environment built on integrity and teamwork.
- Perform other duties as assigned by management.
Requirements:
- Education: Degree or Diploma in Culinary Arts; additional qualification in Business Administration is an advantage.
- Experience: Minimum 7 years of culinary experience in reputable international upscale or luxury hotels and restaurants.
- Experience in Vietnam is essential.
- Strong knowledge of menu development, cost control, food safety and quality assurance, culinary staff training and mentoring, local sourcing and supplier management, sustainable food production, and business reporting.
- Experience in grill concepts or steakhouse operations is a plus.
- Individual Attributes: Mature, resilient, with strong analytical, communication, and commercial skills.
- Proven ability to work under pressure, within teams, and meet tight deadlines with limited resources.
- Proactive, result-oriented, and a self-starter with high professional integrity.
- Fluency in English (spoken and written) is an advantage.
